Cozy Cod Chowder
A creamy, hearty cod chowder loaded with tender potatoes, sweet corn, crisp bacon, and flaky wild-caught cod simmered in a rich, buttery broth. Perfect with a slice of sourdough garlic bread!
Ingredients
- 2-1/2 lbs Cod or fish of choice (chopped)
- 3 Medium potatoes (chopped)
- 5 Bacon slices (chopped)
- 1 Large onion (chopped)
- 1 cup Celery (chopped)
- 1 cup Carrots (chopped)
- 2 TBS Flour or cornstarch
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1 Bay leaf
- 1 TBS Black pepper
- Salt to taste
- 1/2 cup Half & half or heavy cream
- Chicken broth (enough to cover contents in pot)
Method
- Heat large pot over medium heat. Cook bacon.
- Add onions & celery, sauté for 2-3 minutes. Add black pepper, oregano & thyme. Mix well to combine and cook for another minute.
- Add chopped potatoes, carrots & bay leaf. Cover with broth. Stir to combine, cover & bring pot to a boil.
- Reduce heat & simmer for about 8-10 minutes or until the potatoes soften. Don't allow potatoes to get mushy.
- Add cod. Return pot to boil & then reduce heat & simmer for another 5 minutes.
- In a small mixing bowl, add cream & flour. Stir to combine & add to the pot stirring until the chowder thickens.
- Top with parsley or chives & enjoy!

Notes
We often use this exact recipe to make a delicious salmon or pike chowder. We like to serve our chowder with garlic bread on the side. Crackers are great too! This chowder makes delicious leftovers. 🙂
