Roast Chicken

A comforting whole roast chicken with crisp golden skin, tender meat, and simple herbs. Perfect for an easy, nourishing family meal.

Ingredients
  

  • 1 Whole chicken (4 to 5 pounds)
  • 2 to 3 TBS Olive oil
  • 1 TBS Dried thyme
  • Salt/pepper generously
  • 1 TBS Dried parsley
  • 1 TBS Garlic powder
  • 1 TBS Onion powder

Method
 

  1. Preheat oven to 350°F
  2. Combine herbs, spices and salt/pepper in a small bowl.
  3. Rinse chicken in cool water, pat dry and liberally coat the chicken with olive oil, then rub the herb mixture over the whole chicken, inside and out.
  4. Lay chicken breast side down in a dutch oven, cover and roast for 45 minutes. Then increase the temperature to 400°F, remove the lid, and roast for 20 minutes more. Flip the chicken breast side up and roast until the thickest part of the thigh reached 165°F, about 30-45 minutes more.
