Roast Chicken
A comforting whole roast chicken with crisp golden skin, tender meat, and simple herbs. Perfect for an easy, nourishing family meal.
Method
- Preheat oven to 350°F
- Combine herbs, spices and salt/pepper in a small bowl.
- Rinse chicken in cool water, pat dry and liberally coat the chicken with olive oil, then rub the herb mixture over the whole chicken, inside and out.
- Lay chicken breast side down in a dutch oven, cover and roast for 45 minutes. Then increase the temperature to 400°F, remove the lid, and roast for 20 minutes more. Flip the chicken breast side up and roast until the thickest part of the thigh reached 165°F, about 30-45 minutes more.
