Chicken & Veggie Soup

A cozy, hearty chicken veggie soup made with tender chicken and rice simmered in a savory broth until everything is warm, comforting, and nourishing. Perfect for cold days, delicious and wholesome.

Ingredients
  

  • 1-1/2 TBS Olive oil
  • 1/2 Onion (chopped)
  • 1 bag Frozen veggies or fresh
  • 1 TBS Minced garlic
  • Salt/pepper to taste
  • 2 Chicken breasts (diced)
  • 8 cups Chicken broth or stock
  • 1 cup White rice uncooked

Method
 

  1. Heat oil in pan, add onion & garlic, stir to combine. Cook for a few minutes.
  2. Turn heat to high, then add chicken & broth, bring to a boil. Add rice, stir to combine, turn heat down to medium & simmer uncovered for 15-20 minutes.
  3. Add frozen veggies & cook about 5 minutes.
  4. Salt/pepper to taste & enjoy!
