Method
- Heat oil in pan, add onion & garlic, stir to combine. Cook for a few minutes.
- Turn heat to high, then add chicken & broth, bring to a boil. Add rice, stir to combine, turn heat down to medium & simmer uncovered for 15-20 minutes.
- Add frozen veggies & cook about 5 minutes.
- Salt/pepper to taste & enjoy!
