Fiesta Enchiladas

Delicious & fun! Gluten free fiesta enchiladas for any occasion!

Ingredients
  

  • 6 oz Ground meat (I use beef or lamb)
  • 1/4 cup Green onions (Sliced)
  • 1 cup Tomato (Chopped & divided)
  • 1 tsp Garlic (Minced)
  • 1 cup Mexican cheese blend (divided)
  • 1/2 cup Cooked corn
  • 1/2 cup Cooked rice
  • 1/2 cup Cooked black beans
  • 1/2 cup Salsa (Of choice)
  • 6 Corn tortillas
  • 1/2 cup Enchilada sauce (I use a gluten free brand)
  • Sliced lettuce for topping

Method
 

  1. Preheat oven to 375F. Spray baking dish with non stick cooking spray.
  2. Brown ground beef in large skillet over medium-high heat. Drain fat & add green onions & garlic; cook & stir 2 minutes.
  3. Combine meat mixture, ¾ cup cheese, ½ cup tomato, corn, rice, beans & salsa; mix well. Spoon mixture down center of tortillas. Roll up & place in dish seam side down. Liberally top with enchilada sauce & remaining cheese.
  4. Bake covered for 15 minutes & then remove cover to bake an additional 10 minutes. Serve with sliced lettuce/tomatoes & toppings of choice. Enjoy!

Notes

If you microwave your tortillas for about 30 seconds it will make them softer & prevent them from cracking when you fill & roll the enchiladas.
I always double or even triple this recipe so we have plenty of leftovers for the week!
