Pineapple Salsa

A delicious, sweet & tangy topping, perfect for many dishes!

Ingredients
  

  • 1 Pineapple (or mango to make mango salsa)
  • 1/2 Purple onion (Diced)
  • 2-3 TBS Cilantro (chopped)
  • 1/2 Lime (Juiced)
  • Salt/pepper to taste

Method
 

  1. Chop everything up & place in a bowl.
  2. Juice your lime, sometimes I use the whole lime, just add juice to taste ๐Ÿ™‚
  3. Salt & pepper to taste, mix well & place in the fridge to chill prior to eating.
  4. Serve on top of your favorite dish & enjoy!

Notes

I usually double this recipe so we have leftovers for another meal. We love to eat this pineapple salsa over grilled salmon on a bed of white rice! ๐Ÿ™‚
