Gluten Free Key Lime Cupcakes

Fluffy, sweet cupcakes with a tangy lime frosting!

Ingredients
  

Cupcake Ingredients
  • 1-1/2 cup Gluten free flour
  • 1/2 tsp Salt
  • 2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 cup Milk
  • 1 TBS Apple cider vinegar
  • 1 TBS Lime juice
  • 1 tsp Lime zest
  • 2 Eggs
  • 1/2 cup Melted butter
  • 1 cup Maple syrup
  • 2 tsp Vanilla Extract
Icing ingredients
  • 1 stick (1/2 cup) Butter softened
  • 2-1/2 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 2 TBS Lime juice
  • 1/4 cup Milk

Method
 

  1. Preheat oven to 350F.
  2. Mix dry ingredients together. Then add wet ingredients & mix well.
  3. Scoop batter into cupcake pan & bake 18-20 minutes.
  4. While cupcakes are baking, mix icing ingredients together.
  5. Allow cupcakes to cool completely before icing. Enjoy!

Notes

Sometimes I add more lime juice than the recipe calls for to the icing because I like my icing to taste LIMEY! 🙂 It’s a flexible recipe so you can totally adjust to your taste. I like to slice some limes and add to the top of each cupcake to garnish.
