Gluten Free Key Lime Cupcakes
Fluffy, sweet cupcakes with a tangy lime frosting!
Ingredients
Cupcake Ingredients
- 1-1/2 cup Gluten free flour
- 1/2 tsp Salt
- 2 tsp Baking powder
- 1/4 tsp Baking soda
- 1/2 cup Milk
- 1 TBS Apple cider vinegar
- 1 TBS Lime juice
- 1 tsp Lime zest
- 2 Eggs
- 1/2 cup Melted butter
- 1 cup Maple syrup
- 2 tsp Vanilla Extract
Icing ingredients
- 1 stick (1/2 cup) Butter softened
- 2-1/2 cup Powdered sugar
- 1 tsp Vanilla extract
- 2 TBS Lime juice
- 1/4 cup Milk
Method
- Preheat oven to 350F.
- Mix dry ingredients together. Then add wet ingredients & mix well.
- Scoop batter into cupcake pan & bake 18-20 minutes.
- While cupcakes are baking, mix icing ingredients together.
- Allow cupcakes to cool completely before icing. Enjoy!
Notes
Sometimes I add more lime juice than the recipe calls for to the icing because I like my icing to taste LIMEY! 🙂 It’s a flexible recipe so you can totally adjust to your taste. I like to slice some limes and add to the top of each cupcake to garnish.
