Rustic Cheesy Chicken Skillet
An easy, hearty chicken dinner featuring tender chicken, colorful peppers, potatoes, and a creamy, cheesy sauce that's perfect for busy nights or cozy dinners at home!
Ingredients
- 3 Chicken breasts
- 4 TBS Flour ( I use gluten free)
- 6 Medium size potatoes
- 1 Onion (diced)
- 3 Garlic cloves (minced)
- 2 Bell peppers (diced)
- 3.5 oz Cherry tomatoes (cut into halves)
- 1 cup Tomato puree or tomato sauce
- 1/2 cup Water
- 1/2 tsp Thyme
- 1/2 tsp Basil
- 1/2 tsp Rosemary
- Salt/pepper to taste
- 7 oz Mozzarella (grated)
- Fresh parsley to garnish (optional)
- 3 TBS Olive oil
- 3 TBS Butter
Method
- Preheat oven to 400F. Slice chicken into strips. Salt & pepper chicken, mix well to combine. Add the flour and mix well again.
- Heat oil in skillet over medium heat. Add chicken. Cook for about 4 minutes per side & then remove from the skillet.
- Add butter to the skillet and melt over medium-high heat. Add potatoes and cook for about 10 minutes stirring occasionally.
- Add onions & garlic to the potatoes, stir to combine and cook for 4 minutes.
- Add the bell peppers and tomatoes, combine well. Then add tomato puree and water, stir to combine.
- Add thyme, basil & rosemary, salt & pepper, stir to combine.
- Add the chicken back to the skillet, pressing each piece down into the mixture. Sprinkle mozzarella cheese over top & bake for 10 minutes and then garnish with parsley (if using) and enjoy!
