Rustic Cheesy Chicken Skillet

An easy, hearty chicken dinner featuring tender chicken, colorful peppers, potatoes, and a creamy, cheesy sauce that's perfect for busy nights or cozy dinners at home!

Ingredients
  

  • 3 Chicken breasts
  • 4 TBS Flour ( I use gluten free)
  • 6 Medium size potatoes
  • 1 Onion (diced)
  • 3 Garlic cloves (minced)
  • 2 Bell peppers (diced)
  • 3.5 oz Cherry tomatoes (cut into halves)
  • 1 cup Tomato puree or tomato sauce
  • 1/2 cup Water
  • 1/2 tsp Thyme
  • 1/2 tsp Basil
  • 1/2 tsp Rosemary
  • Salt/pepper to taste
  • 7 oz Mozzarella (grated)
  • Fresh parsley to garnish (optional)
  • 3 TBS Olive oil
  • 3 TBS Butter

Method
 

  1. Preheat oven to 400F. Slice chicken into strips. Salt & pepper chicken, mix well to combine. Add the flour and mix well again.
  2. Heat oil in skillet over medium heat. Add chicken. Cook for about 4 minutes per side & then remove from the skillet.
  3. Add butter to the skillet and melt over medium-high heat. Add potatoes and cook for about 10 minutes stirring occasionally.
  4. Add onions & garlic to the potatoes, stir to combine and cook for 4 minutes.
  5. Add the bell peppers and tomatoes, combine well. Then add tomato puree and water, stir to combine.
  6. Add thyme, basil & rosemary, salt & pepper, stir to combine.
  7. Add the chicken back to the skillet, pressing each piece down into the mixture. Sprinkle mozzarella cheese over top & bake for 10 minutes and then garnish with parsley (if using) and enjoy!
