Gluten Free Chocolate Chip Banana Bread

Sweet & chocolatey banana bread, perfect with a warm cup of coffee!

Ingredients
  

  • 1-1/2 cup Gluten free flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 cup Packed brown sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1/2 cup Oil
  • 1-1/2 cup Mashed bananas (About 2 medium bananas)
  • 1 cup Chocolate chips (optional)
  • 1/2 cup Chopped walnuts (optional)

Method
 

  1. Preheat oven to 350F. Spray an 8x4" loaf pan & set aside.
  2. In a medium bowl, combine flour, baking soda & salt. Set aside.
  3. In a large bowl, whip together brown sugar & eggs until light & fluffy & doubled in size. (About 5 to 7 minutes). Add vanilla extract, then slowly add oil until evenly incorporated. Fold in mashed bananas followed by dry ingredients.
  4. Gently fold in walnuts (if using) & chocolate chips (if using). Pour batter into prepared pan & bake until inserted toothpick comes out clean, about 1 hour. Let cool 5 minutes before removing from pan. Enjoy!
