Gluten Free Chocolate Chip Banana Bread

Sweet & chocolatey banana bread, perfect with a warm cup of coffee!
Method
- Preheat oven to 350F. Spray an 8×4" loaf pan & set aside.
- In a medium bowl, combine flour, baking soda & salt. Set aside.
- In a large bowl, whip together brown sugar & eggs until light & fluffy & doubled in size. (About 5 to 7 minutes). Add vanilla extract, then slowly add oil until evenly incorporated. Fold in mashed bananas followed by dry ingredients.
- Gently fold in walnuts (if using) & chocolate chips (if using). Pour batter into prepared pan & bake until inserted toothpick comes out clean, about 1 hour. Let cool 5 minutes before removing from pan. Enjoy!
