Gluten Free Peanut Butter Cookies

Peanut butter cookies, a family favorite!

Ingredients
  

  • 2 TBS Gluten free all purpose flour + more if needed
  • 1 cup Peanut butter
  • 1 tsp Vanilla extract
  • 1 cup Brown sugar
  • 1 tsp Baking soda
  • 1 Egg
  • 1 cup Chocolate chips (optional)

Method
 

  1. Preheat oven to 350F.
  2. Mix ingredients in a bowl & roll together into 1 inch balls. Place on cookie sheet lined with parchment paper.
  3. Gently press lightly with a fork to make the classic peanut butter criss cross.
  4. Bake for 8-10 minutes. Allow to cool on a cooling rack.

Notes

The chocolate chips make a wonderful addition to these cookies. They taste like Reese's peanut butter cups! :)
