Stew Ingredients
- 8 slices Bacon (sliced into 1/4" strips)
- 2 Cloves garlic (minced)
- 1 Large tomato (diced)
- 1 Large onion (diced)
- 1 Green bell pepper (diced)
- 1-2 Bay leaves
- Salt/pepper to taste
- 1.5 lbs Stewing beef (cut into 1/2" pieces)
- 3-4 TBS Paprika
- Water or broth (see recipe instructions)
Mashed Potato Ingredients
- 2 lbs Potatoes (Largely chopped)
- 3 TBS butter
- Salt/pepper to taste
- 1/2 cup Milk
Method
Make the Stew
- In heavy pot or dutch oven, fry bacon until done.
- Add onion to bacon & cook on medium high heat until golden.
- Add bell peppers & garlic. Cook for another two minutes.
- Add the beef & cook for one minute.
- Remove from heat, add paprika. Mix in well.
- Add tomatoes, bay leaves & salt/pepper.
- Add water or broth, do not cover meat.
- Return to heat, bring to a boil. Once boiling, reduce heat, cover & simmer for 90 minutes.
Make the Mashed Potatoes
- In pot, cover potatoes with water, bring to a boil. Boil until potatoes are tender (check with a fork).
- Strain potatoes & return to pot.
- Add milk, butter & salt/pepper.
- Mash/blend well until they are the consistency that you like for mashed potatoes.
- Serve hot Hungarian stew over a bed of mashed potatoes. Enjoy!
