Hungarian Stew & Mashed Potatoes

Ingredients
  

Stew Ingredients
  • 8 slices Bacon (sliced into 1/4" strips)
  • 2 Cloves garlic (minced)
  • 1 Large tomato (diced)
  • 1 Large onion (diced)
  • 1 Green bell pepper (diced)
  • 1-2 Bay leaves
  • Salt/pepper to taste
  • 1.5 lbs Stewing beef (cut into 1/2" pieces)
  • 3-4 TBS Paprika
  • Water or broth (see recipe instructions)
Mashed Potato Ingredients
  • 2 lbs Potatoes (Largely chopped)
  • 3 TBS butter
  • Salt/pepper to taste
  • 1/2 cup Milk

Method
 

Make the Stew
  1. In heavy pot or dutch oven, fry bacon until done.
  2. Add onion to bacon & cook on medium high heat until golden.
  3. Add bell peppers & garlic. Cook for another two minutes.
  4. Add the beef & cook for one minute.
  5. Remove from heat, add paprika. Mix in well.
  6. Add tomatoes, bay leaves & salt/pepper.
  7. Add water or broth, do not cover meat.
  8. Return to heat, bring to a boil. Once boiling, reduce heat, cover & simmer for 90 minutes.
Make the Mashed Potatoes
  1. In pot, cover potatoes with water, bring to a boil. Boil until potatoes are tender (check with a fork).
  2. Strain potatoes & return to pot.
  3. Add milk, butter & salt/pepper.
  4. Mash/blend well until they are the consistency that you like for mashed potatoes.
  5. Serve hot Hungarian stew over a bed of mashed potatoes. Enjoy!
